Recipe of King Henry IV's boiled chicken

In a big pot place in the water as for a pot au feu: 6 carrots, 3 turnips and 2 leeks. Salt and pepper.

Bring to the boil over high heat and simmer for an hour.

Now take a middle-size chicken and take the giblets (liver, gizzard and heart), chop them with breadcrumbs and spices of your choice.

Salt and pepper the cavity of the chicken and fill it with the stuffing: remember to sew the opening with coarse thread so that the stuffing does not get out.

Put the chicken into the pot. Bring the simmering back to the boil over high heat. And after this, reduce heat to low and simmer for 3 hours.

Serve the broth as a first course or together with the chicken, cut into pieces together with vegetables.
